Rum Balls (Vegan)

A quick no-bake dairy-free treat that is perfect for the Christmas season that freezes well. For kids, simply skip the rum. Makes 28 pieces.




4 tbsp plant based Nuttelex (melted)

12 wheat bricks crushed to a fine crumb (gluten free or regular)

1/2 tin coconut condensed milk

3/4 cup small chopped toasted walnuts (toast for about 5 min in the oven)

4 tbsp shredded or dedicated coconut

3 tbsp cacao/cocoa powder

3 tbsp rum

4 tbsp apricot Jam or marmalade

1/2 cup chopped raisins


2Blitz the wheat bricks to a fine crumb.

3Place the crumb in a bowl along with all the other ingredients. Work the mixture with your hand for 5 minutes to really bind everything together.

4Scoop a tablespoon portion, squeeze mixture firmly and roll it in your hand to create a ball shape.

5Split the balls into two batches. Roll one set of balls in the cacao/cocoa and then roll remainder in the shredded/dedicated coconut.

6Store on tray in fridge or freezer or a container but do not stack them while storing them in the refrigerator.
