Zucchini Fritters (Vegan)

These flavour-filled bite-sized fritters are super easy to make and packed full of greens and veggie goodness. To ensure they are crispy make sure you salt, rest and squeeze the zucchini as per instructions below.

Ingredients

1/4 cup Nuttelex

500 g grated zucchini (3 1/2 cups)

1 tsp salt

1 cup plain flour

1/2 tsp garlic powder

1/2 tsp baking powder

1/4 cup nutritional yeast

1 pinch white pepper

4 spring onions (chopped)

olive oil (for frying)

serve with vegan sour cream with spring onion

1 finely sliced (lengthways) spring onion

1 cup vegan sour cream

TOOLS

paper towels

grater

non stick fry pan

spatula

wooden spoon

clean tea towel or mesh veg bag (to strain zucchini)

ice-cream scoop for the perfect fritter size, or use 1/4 measuring cup

Directions

1Place grated zucchinis in a large bowl, sprinkle with salt and let sit for 10 minutes. Next, place the zucchinis in a clean tea towel or a mesh veggie bag & squeeze out the excess liquid.

2Next, place all the ingredients into a large bowl and stir well with a wooden spoon to combine to form the batter.

3On medium-high heat, add enough olive oil to cover the base of a frypan. With the aid of an ice-cream scoop or 1/4 measuring cup, scoop even sized amounts of batter into the frypan then use a spatula to flatten your fritters.

4Cook in small batches a few at a time. Fry for 3 minutes or so, then gently flip to cook the other side. Drain on a plate lined with paper towel.

5Serve with the sour cream and fresh chopped spring onions!
